When you’re feeling like you need to eat some veggies, this is a good one to have in your back pocket. Getting a steak-like sear on vegetables takes them to the next level. This recipe can be knocked out quickly. There are 3 main ingredients - BROCCOLI. GARLIC. CHILIES. The secret and most important ingredient however is THE SEAR. Let it sizzle, be aggressive with it, sear it until just before it burns and the result will be delicious. Buon Appetito.

- 1/2 lb broccoli, with stems
- 1/4 cup extra virgin olive oil plus more if needed
- 2 teaspoons red pepper flakes
- 3 cloves garlic, minced
- salt
- 2 tablespoons water

- Trim 1 inch of the broccoli stem. Slice 1/4' broccoli steaks by slicing from the florets all the way down to the stem. There will be leftover small floret pieces that fall off, keep those and use them as well. Add the olive oil to a hot pan and sear over high heat. Cook the broccoli in one even layer. Work in batches if your pan isn't large enough. Season with salt and sear the broccoli over medium high heat for a few minutes until the stems are a deep golden brown color, then flip. After about a minute or two on the second side, turn the heat down to medium and add the water and cover the pan. Let the broccoli steam for about 1 minute. Remove the lid and cook until the water evaporates. Move the broccoli to one side of the pan and add about a tablespoon of olive oil to the other side. Add the garlic and red pepper flakes to the olive oil. As the garlic begins to sizzle (almost immediately) toss the broccoli, garlic, and red pepper flakes all together a few times with a pair of tongs. Remove the broccoli to plates and make some people happy.
